Strawberry field salad with juicy fresh strawberries, feta cheese, red onion, dried cranberries, bacon, grilled chicken, glazed pecans and a sweet, tangy vinaigrette packed with flavor. It's a great salad for spring!

 


There is the sweetness of strawberries, glazed pecans and salad dressing, as well as a lot of savory feta and bacon. The sweetness is balanced with a lot of acidity of the vinaigrette and a little spicy iced pecans.

Fresh and juicy local strawberries are everywhere at this time of year and since they are only available for a short time, I think it's best to try to eat them every day.

Besides smoothies, salads are my favorite way to burn off excess strawberries. I find that the really ripe strawberries are so juicy, I just want a dash of vinaigrette with them.

Tips for preparing a strawberry field salad:


This salad is fully customizable. You can use romaine lettuce instead of mixed greens or blue cheese instead of feta.

Use the rest of the chicken or roast chicken instead of grilled.

Shrimp is a great choice if you don't want to use chicken.

To keep things simple, use store-bought frozen pecans.

I add grilled chicken when I want to make a main dish of this salad and I leave it outside when I serve the strawberry field salad with something else.
