I came to create this soup because I wanted to make the soup, Zuppo Toscano, which is from Olive Garden. My colleague and I went to enjoy the soup and endless salad promotion they usually offer in January and February - once I tasted this soup, I wanted to know how to prepare it. I have worked on it and refined the recipe ever since. It only vaguely resembles olive soup now, so we call it Knock Your Socks Off!

Cut your socks with Crock Pot soup

ingredients:

8 oz. Italian sausage, cooked and crumbled

4 potatoes, peeled and cubed

1 14.5 oz canned diced tomatoes.

1 cup of bacon, very crisp fried and finely chopped (I used this type already in a bag and it works better)

1 16 oz. container of Mushrooms, sautéed in a little butter or olive oil then finely chopped

1 cup kale, cleaned and chopped with this cut woody stem. You can use spinach or leave them completely!

2 cups heavy cream

32 oz. Chicken broth

2 tablespoons flour

Instructions:

Take out the Crock Pot!

Put the sausage, potatoes, chicken broth, can of diced tomatoes and JUST enough water to cover, but ONLY if you need it.

Cook on high power for 3-4 hours.

Whisk the flour in the heavy cream, make sure to remove the pieces and all the other items are very finely chopped - it makes a huge difference!

Put the cream, kale, mushrooms and bacon in the soup.

Cook another 30 to 45 minutes.

Sprinkle with freshly grated parmesan, bacon and green onion pieces if desired, then serve!

This can be put in containers and frozen for lunches. It is delicious!
