How to make healthy mushroom soup

    Step 1: Chop the onions and cut the mushrooms into rings. Fry the onions until they are slightly softened. Add the mushrooms and cook the mushrooms for 5-6 minutes.
    Step 2: Add the fresh thyme, salt, garlic powder, bay leaves and coconut aminos to the mushroom and onion mixture.

Which mushrooms make the best mushroom soup

This recipe uses a mixture of cremini mushrooms (baby portabella mushrooms) and white mushrooms. Cremini mushrooms add a depth of flavor and umami that you don't get with just white button mushrooms. You can also use shitake mushrooms, but these are generally more expensive, so I stick with the cremini and the white button to save money.

To save time, you can buy the pre-cut mushrooms but I prefer to buy them whole and cut them myself because the pre-cut mushrooms can deteriorate more quickly.
Tips for working with mushrooms:

To prepare the mushrooms, use a dry paper towel to remove any dirt / grime you see. Do not run mushrooms underwater, as they are very porous and absorb water, and never really develop their flavor completely.
